CATI'S MOUTH WATERING HOT FRUIT KEBABS
Ingredients: (Serves 8)
• 1 Fresh Pineapple or 1 can of pineapple chunks in natural juice if preferred
• 1 Punnet of Strawberries
• 2 Bananas
• 2 Kiwi Fruits
• 3 Plumbs
• 2 Peaches
• Honey
• Fresh Mint
• Coconut
• Lemon Juice
• Wooden Kebab Skewers
Method:
• Soak the wooden kebab sticks in water to avoid scorching on the grill
• Wash and dry all fruit well. Prepare as detailed below keeping to one side before assembling together on the kebab sticks
• Remove the outer skin of the pineapple using a knife (remember to ask a responsible adult to help you at all times)
• Core the pineapple and cut into 2" chunks
• Peel the kiwi fruit and quarter
• Cut the plums and peaches in half and remove the stones from the fruit. Cut into 2"chunks
• Remove the stem from the strawberries.
• Peel the bananas and sprinkle lightly with the lemon juice
• Place the prepared fruit onto the kebab sticks remembering to alternate the fruit to make it look attractive and fun to eat
Option 1
• Place prepared fruit kebabs onto a serving dish. Drizzle honey mix over the prepared kebabs. Sprinkle with coconut and serve.
Option 2
• Alternatively place the fruit kebabs on a grill (medium heat) turning occasionally for approximately 2 minutes making sure not to burn
• In a bowl add the honey, lemon juice and chopped mint and mix together well
• Lightly brush the fruit with the honey glaze and place back on the grill for a further 1-2 minutes
• Remove from the grill and drizzle with any remaining honey mixture. Serve immediately with the toasted coconut if desired
NB: This recipe contains traces of nuts
