Cati's Hot Mulled Pineapple Drink

It can be very cold in Winter. With this in mind Cati suggests you try this recipe, as it is a fun and different way of keeping warm. The recipe allows you to make enough to share with your family and friends.

For this recipe you will need:

• 1 litre carton of unsweetened pineapple juice
• 100 mls reduced sugar cranberry juice
• 1/3 cup brown sugar
• 1 medium lemon
• Mixed spice to taste

Method:

1. In a large saucepan, combine the pineapple and cranberry juice together with the brown sugar and mixed spice to taste. Bring to the boil making sure you ask a responsible adult at this time to help you.
2. Reduce the heat and simmer uncovered for approximately 10-15 minutes.
3. Transfer to a jug and serve this tasty hot drink in tall mugs with a slice of lemon.

Cati says, "This was a really lovely drink to warm us all up after we have been out to play in the snow, and it was great fun decorating the mugs with umbrellas and fresh fruit to make them look attractive".
