It is Shrove Tuesday so many of you will be cooking pancakes for tea. We have a simple recipe for you to follow.
Makes 12 pancakes
110g plain flour, sifted
Pinch of salt
2 eggs
200ml milk mixed with 75ml water
50g butter
Sift the flour and salt into a large mixing bowl, then make a well in the centre of the flour and break the eggs into it.
Next you need to whisk the eggs into the mixture. This can be done using any type of whisk (or fork if you don't have a whisk). Once this has been mixed add small amounts of the milk and water mixture at a time whilst continuing to whisk.
Make sure all the flour (including that around the edges of the bowl) has been included and whisk again until the batter is smooth. It should be the consistency of thin cream.
Melt your butter in a pan and spoon 2 tbsp of it into the batter. Whisk the mixture one more. The rest of the butter can be used to grease the pan so the pancakes don't stick. Use kitchen roll to grease the pan.
Next turn up the temperature on the hob so the frying pan gets really hot and then turn the heat down to a medium heat. You will need around 2 tbsp of a mixture for a 7in pan but you may want to do a test pancake first to work out the right measurements for your frying pan.
Use a ladle or large spoon to put the mixture into the pan in one go. The second the batter hits the hot pan, hold the handle and tip it from side to side. This is to get an even coverage of the mixture and ensure all of the base of the pan is covered.
It should take only about 30 seconds to cook the pancake so after this time lift the edge with a palette knife to see if it's a slightly gold colour. If it is flip the pancake over with a palette knife and fry for a few more seconds. When ready slide it out of the pan onto a plate and then start again making your next one.
Pancakes are delicious sweet or savoury and are a special treat on this one day of the year.
