Recipe - an after school snack to make at home

Banana & Apricot loaf

Is your child asking for an unhealthy sweet snack when they come home from school? Do you want them to eat something more healthy? This recipe is ideal for snacks and easy to make at home. Even your children can help make it too!

Ingredients:
2 medium sized eggs
200g dark brown soft sugar
125ml sunflower oil
2 large bananas, peeled and mashed
50g, ready to eat apricots, snipped
50g high fibre bran
300g plain flour
2 teaspoons baking powder
6 tablespoons milk

Method:
1. Preheat the oven to 190ºC, 375ºF, gas mark 5. Grease and line a 1kg loaf tin.
2. Cream the eggs and sugar, add the oil, bananas, apricots and bran then stir to combine.
3. Sieve the flour, baking powder and fold into the mixture with a metal spoon, adding the milk to produce a dropping consistency.
4. Pour into the prepared tin and bake in the oven for 1 hour. Test with a skewer, if it comes out clean the loaf is cooked.
5. Turn out onto a rack to cool.
