Manchester School Dinners to be made at home...
Following last week's recipe for flapjacks, here is a lovely recipe for a pineapple cake. Why not make the cake with your children and then relax in the sun!
Don't forget this recipe appears on the school dinner menu in your child's school.
Pineapple fruit cake 12 portions
Ingredients
280g white flour
60g wholemeal flour
20g baking powder
3 eggs
220g margarine
270g soft brown sugar
125g pineapple pulp
57g currants
57g sultanas
57g raisins
Method
1. Preheat the oven to Gas Mark 4 or 350°F/180°C.
2. Lightly grease a deep baking tin and place to one side.
3. Place into a saucepan the sugar, margarine, currants, sultanas, raisins, pineapple pulp and any juices.
4. Cook for 4 minutes, but do not boil.
5. Cool
6. Beat the eggs in a bowl. Sieve the flour with baking powder into the bowl. Pour the mixture from saucepan into the bowl. Lightly mix all the ingredients together.
7. Then place the mixture in your baking tin.
8. Put in the oven and cook for approximately 1 hour.
Cook's tip:
Once cooled, wrap the cake in foil and store in an airtight container. This cake tastes better the day after making it!
