Tasty Pizza Topped Fish
Manchester School Dinners to be made at home...
So you've made dessert last week, here's a tasty main meal to go with it. We have lots of interesting fish dishes on our school menu and this is one of them.
Pizza topped fish - Serves 4
Ingredients
4 x 200g white fish fillets
1 medium onion
227g tin chopped tomatoes
1 tablespoon tomato puree
A pinch of mixed herbs
A sprinkle of salt and pepper
100g grated cheese
Method
1. Preheat the oven to 200º C /400º F / Gas Mark 6
2. Cut the fish fillets into portions removing any bones.
3. Lightly grease a baking tray and place the fish on this.
4. Prepare the tomato topping by peeling and finely chopping the onion. Then cook until soft in a little oil over a low heat.
5. Drain the chopped tomatoes and mix together with the cooked onion, tomato puree, herbs, salt and pepper.
6. Spread each fish fillet with this topping. Then sprinkle the grated cheese on top.
7. Bake in the oven or until the cheese is golden and the fish is cooked through, approximately 15 to 20 minutes.
Cook's tip:
Serve with potatoes or vegetables for a tasty meal!
