Try something a little different at home.
Jamaican Jerk Chicken is a dish that has to be tried. This is one of the dishes that we feature on our Manchester school meals menu. We like the children to be able to try all different types of food. This is an easy dish to be made so involve your children and they will be so pleased they could make it.
Jamaican jerk chicken (serves 4).
Ingredients
4 spring onions
2 cloves of garlic
2 jalapeno peppers
2 limes
1 teaspoon of allspice
3 tablespoon of oil
1 teaspoon salt
a quarter teaspoon pepper
8 chicken thighs, about 2.5lb
Method
1. Preheat the oven to 200oC / gas mark 6.
2. Chop the spring onions, garlic and jalapeno peppers and put in a large bowl.
3. Cut the limes and squeeze 3 tablespoons of juice from them. Add this to the bowl with the allspice, oil, salt and pepper to make a marinade.
4. Place the chicken in the bowl and coat both sides with the marinade and let the chicken marinate for 30 minutes.
5. Place the chicken in an ovenproof dish and cook in the oven for 30 minutes. Half way through cooking coat the chicken with the remaining marinade. Check if chicken is cooked by piercing with a skewer, juices should run clear.
Cook's tip:
Serve with rice or salad.
