Winter Warmer Recipe

After the last week of snow, frost and freezing temperatures it looks like we might finally be getting some more spring-like weather.  But while temperatures are still low here is a recipe that will warm up the whole family.

Traditional Shepherd's Pie

This dish is a firm favourite with the kids and it's a great treat on a cold winter's day served with gravy and fresh vegetables.  We've added lentils and sweet potato to this one plus some hidden vegetables!

Ingredients

  • 750gm minced lamb
  • 1 diced onion
  • 56gm grated carrot
  • 56gm mushrooms
  • 56gm lentils
  • 1 vegetable stock cube
  • 600ml water
  • 28gm cornflour
  • 500gm potatoes
  • 250gm sweet potato
  • Olive oil

Cooking Temperatures

  • 200°c/400°F/Gas Mark 6

Total Portions

  • 8 portions

Method

  1. Peel dice and boil both types of potatoes until cooked.
  2. Mash the potatoes together.
  3. Fry off onions and mushrooms.
  4. Add the lamb and gently fry off.
  5. Add the made up stock, carrots and lentils, bring to the boil, then simmer for at least 20 minutes.
  6. Make up the cornflour paste and add to the mixture.
  7. Stir until thickened.
  8. Place in an oven proof serving dish.
  9. Top with mashed potato.
  10. Cook for 30-40 minutes.

Handy Tips

  • Garnish with sliced tomatoes and fresh parsley.
  • Always wash your hands thoroughly before cooking.
